Healthy veggie-bean soup
The easiest meal you could ever prep. You like veggies? Beans? Can also make it spicy exactly the way you like it & suitable for vegans.
STEP ONE:Prep the ingredients
1 egg plant
1 zucchini 1 onion
3-4 cloves of garlic
Some coriander
Chop all the ingredients the way you like (See pic)
STEP TWO: Get your beans ready
I use two or three types of beans & chopped tomatoes in a can. So again it is up to you to choose your favourite ones. I love butter beans & kidney beans the most!
STEP THREE: Chopped veggies go in the pan for 5-7 min ;)
STEP FOUR: Mix all
The beans & canned tomatoes are at this point accompanied by the veggies that have gotten softer in the pan.
SPICE-IT-UP Salt
Pepper
Cayenne pepper (spicy) Vegan bullion
ENJOY!
P.S. Delicious when cold as well!
